Made Better
Usually the centrepiece of the savoury part of a grand afternoon tea, soft fresh bread, crusts off, cut to two-bite daintiness - sandwiches are the shining stars with a lovely cup of tea.
Ham and mustard, cheese with fig relish or red onion marmalade, tomatoes, salad, prawns with garlic mayonnaise, chicken and spiced apricot chutney, wafer thin sliced cucumber, egg mayonnaise with chopped chives, chilli jam with sweet chicken liver pate, or minted mayonnaise with slices of falafel.

Make Your Sandwiches Better - HERE
You'll need:
- 230 g of self-raising flour
- 1 tsp of baking powder
- 2 tsp of Stokes Classic English Mustard
- 60 g of butter
- 100 g of Cheddar cheese
- 90 ml of milk
Pre-heat the oven to 200°C/gas mark 7. Thoroughly combine the flour and baking powder with a pinch of salt by sifting them together into a bowl.
Rub the butter and mustard into the flour until the mixture resembles breadcrumbs, then finely grate and combine the cheese. Gradually add the milk until you have a firm dough (you may not need all the milk). Roll the dough on a dusting of flour to 2cm thick and cut into circles.
[TIP: use the rim of a glass if you don't have a cutter.]
Pop your 2cm thick circles on a baking tray, brush with a little milk, then into the oven for about 15 minutes.
Mini Jackets
These tasty little morsels are always a hit. Prick your baby new potatoes and rub them with oil and salt, then onto a baking sheet and into the oven, pre-heated to 170°C/gas mark 5.
They could take up to 1 hour according to their size so check them after 50 minutes. Cross cut a star into the top and fill.
Try Stokes Garlic Mayonnaise and chopped chives. Stir 1 tsp of our Chilli Jam into soured cream to spoon into the teeny jackets. A combination of our Real Mayonnaise and Red Onion Marmalade is a particularly yummy combo.
Saving the best till last - these ooze tasty goodness.
Make or use shop bought pancakes. Chop up some lovely thick pieces of ham and make a wonderfully cheesy thick béchamel sauce.
Melt 25g of butter in a pan, add 25g of plain flour to make a roux. Stir in 2 tsp of Stokes Dijon Mustard and 350ml of milk (stirring constantly). When it is smooth and simmering add 90g to 100g of grated Cheddar cheese and a pinch of nutmeg.
Halve the pancakes, spoon the sauce and ham onto each piece, roll tightly and tuck in the ends. Make lots because they will be very popular - enjoy.
