Summer !
We've got it all wrapped up
Keeping a packet or two of plain Tortillas in the freezer is a family essential.
Defrosted in just a couple of hours, these versatile flattened dough balls are ready to wrap all sorts of wonderfully tasty ingredients.
Falafel Salad
Supermarket falafels are now so good and have such variety that it's really not worth making your own. In a wrap with a fresh, light salad, they are a meal in moments.
Dress it up with a minty sauce. Put 200 g (a small pot) of Greek yogurt in a bowl and stir in 2 tbsp of Stokes Garlic Mayonnaise, 2 or 3 (to taste) tsp of Stokes Mint Sauce and 1 tsp of Stokes Creamed Horseradish Sauce. This adds a hint of garlic and horseradish to the sweet garden mint and white wine vinegar finish.
Chicken Nuggets
Dress up chicken nuggets or goujons in this tasty wrap.
Cook the chicken as you prefer, whilst grilling a few rashers of bacon. Then, on a grill tray, put the cooked nuggets with a rasher of bacon on top and a sandwich slice of cheese cut to size on top of that. Pop it under the grill to melt the cheese.
Dress some mixed salad leaves with our fruity, sharp Raspberry & Balsamic Dressing. Now, build the wraps, spreading each with Stokes Real Mayonnaise and a little of our Classic English Mustard (for sharpness), dressed salad and sliced tomatoes, with the chicken, bacon and melting cheese on top.
Wrap tightly to keep all the goodness in and enjoy.
These take prawn cocktail wraps to dazzling new heights of yummy.
Very simply, put as many cooked prawns as you want into a bowl with finely chopped sweet red pepper. Now add Bloody Mary Cocktail Sauce which is made of 3 parts Stokes Real Mayonnaise to 1 part Stokes Bloody Mary Ketchup (made with a good shot of vodka and our special Bloody Mary spices).
Coat the prawns and pepper well, then fill and role your tortillas. Now, treat them as enchiladas by popping them on a baking tray, scatter with a covering of cheese and jalapeno peppers (optional), then into a hot oven or under the grill for 5 minutes or so to melt the cheese.
Just as wraps are versatile, so too are prawns.
We used fresh prawns for this, slicing peppers and frying them in oil with 2 cloves of grated garlic. As the peppers begin to soften, add the prawns and 2 or 3 good glugs of Stokes Chipotle Ketchup - smoky and poky with chipotle chillis.
Lift the peppers and prawns from the pan when cooked and set aside. Make a simple tomato salsa with a few skinned, deseeded, chopped cherry tomatoes mixed with 2 tbsp of Stokes Burger Relish and 1 or 2 tsp of Stokes Chilli Jam (to taste).
Build your wrap with slices of cooling avocado, smoky prawns and peppers, a spoon or two of salsa and one of sour cream. Finally add a good squeeze of lime juice and away you go.
