Put a little fire in your food
The Scoville scale is the international measure of 'hotness' for chillis. It measures the concentrations of capsaicin which is the active component of the Capsicum, the genus to which chillis belong.
Heat ranges from '...a sweet tingle...' of mild bell peppers falling within the 1-100 SHU (Scoville Heat Units) side of the scale. Heat moves on to the '...eye watering sniffle...' of the likes of cayenne - 30,000 – 50,000 SHU.
At the other end of the spectrum - '...OMG don't even go there...' - the hottest known pepper is the Carolina Reaper, which can get up to 2.2 million SHU.
The Trinidad Moruga Scorpion is the second hottest pepper in the world at 1.2 million SHU, with capsaicin levels so high that it soaked through the harvesters’ latex gloves when tested for cultivation.

It differs from those above by removing the smokiness, intensifying the tomatoes and adding red chillis and cayenne pepper for a mouth-tingling finish.
Use it to spice up Tasty Tacos by adding it to the onion, minced beef, garlic, tin of tomatoes and a little paprika.
Brush it onto sausages before grilling them or simply fire up a cheeseburger.
Sweet Chilli Jam
Meet one of the stars of the Stokes portfolio and an absolute 'must have' in the store cupboard.
