Say it with eggs
Bloody Mary Baked Eggs
Oeuf en Cocotte (baked egg) is an old classic that we don't see very often, which is a shame because it tastes wonderful.
As with most things we do at Stokes, we have taken an old classic and given it a tasty modern twist adding our Bloody Mary Ketchup and baking the eggs in a scooped out tomato.
Here's how:
Take 2 big round tomatoes, cut off their tops and scoop out the inside flesh and pips. Fry the tomato pulp with a finely chopped shallot and the meat squeezed from the skin of a good Cumberland-style sausage and add 1 tbsp of Stokes Bloody Mark Ketchup.
Put each scooped out tomato into a ramekin (this stops it collapsing while baking) and half fill each with the sausage mix. Put the ramekins in a roasting tray sitting in half an inch of boiled water, then put the tray into the oven at 200°C/Gas mark 5 for 25 minutes (you'll see the egg white is cooked). Served with toast it's fun and flavoursome.
Sausage & Egg Mess
Here's how:
Shop-bought waffles make an easy alternative to toast. Here, we toast them until crisp, tear them and keep them warm.
Take the meat from the skin of 2 or 3 butcher's sausages, smash it up on a plate, add 1 or 2 tbsp of Stokes Brown Sauce and break the meat into smaller pieces. Put the sausage meat onto a baking tray then bake it in a hot oven until it becomes well coloured and slightly crunchy.
Dress the plate with crunchy broken waffles, sausage crumbs and a poached (of fried) egg. Finish with a good drizzle of hollandaise sauce (this can be shop bought, home made, or you could try this instant hollandaise sauce recipe, below).
Instant Hollandaise - Stokes Style
Here's how:
Mix 4 tbsp of Stokes Real Mayonnaise with 3 tbsp of sour cream, 1 or 2 tsp (to taste) of Stokes Dijon Mustard and the juice of 1/2 a lemon. Beat this together and add 1 tbsp of melted butter. Whisk this vigorously to avoid it splitting.
Smoked Salmon Eggs Benedict
Here's how:
For this dish, use the hollandaise sauce as above or, to marry with the smoked salmon, use 1 or 2 tsp (to taste) of Stokes Mustard & Dill Sauce instead of the Dijon mustard. It's a fabulous match.
Then, basically toast a couple of muffins, spread a little of our Real Mayonnaise on them, top with smoked salmon and a poached egg.
Smother with hollandaise sauce or dill hollandaise and share the love.
