Tasty tips for flavour-filled food

In this issue of our series of newsletters, we will be sharing some simple ideas that we all swap with each other. Try some and perhaps share some of your own favourites too.

They are fun, flavoursome and inspire other twists that turn an occasional condiment into an essential kitchen tool - the taste tool.


Bloody Mary Prawns

A Little Gem lettuce, fresh prawns (about 500g to serve 4), a lemon, 5 tablespoons each of Stokes Real Mayonnaise and Stokes Bloody Mary Tomato Ketchup, and a little crushed black pepper to taste.

Try this:
Peel the fresh prawns, rinse and set aside. Mix the mayonnaise and Bloody Mary Ketchup together in a bowl. Add the peeled prawns and mix gently.

Line four small bowls with Little Gem lettuce leaves and add the prawn mix equally between the bowls. Add the black pepper to taste and decorate with a two half slices of lemon. Serve with crusty bread.

Our tomatoes are grown by a number of carefully selected farmers on the sun drenched foothills of southern Italy.

They are plump, sweet and juicy and we use lots of them, in fact a full 200gms are simmered gently to satisfy the flavours of 100gms of Stokes Award-Winning Tomato Ketchup.

1. Stir into a bolognaise sauce for extra tomato flavour! 
2. Add a dash of white wine vinegar, oil and worcestershire sauce to Ketchup for a saucy salad dressing
3. Add chopped peppers, onion and garlic to ketchup for a delicious burger relish!
4. Stir into soups and stews as a rich, tomatoey base...

You will need:
1 ripe Avocado,
Juice of 1/2 Lemon,
a dash of Stokes Sweet Chilli Sauce
2 tbsp Stokes Real Mayonnaise.


Try this:
Place the peeled and stoned avocado into a food processor with the lemon juice and Sweet Chilli Sauce to give a little kick. Blitz till smooth and fold in the mayonnaise.

Serve with Haddock fillets, coated in a mixture of chopped peanuts and polenta with a little curry powder to give a crisp coating when fried, delciously simple!


10 ways to use Sweet Chilli Sauce

With its sweet, clean taste this sauce is deliciously versatile - use as a dip, a glaze, a marinade or the centrepiece to one of your great stir fries!

1. Pour over strips of cooked chicken, layer with peppers and lettuce for a fresh wrap filling.
2. Mix with a dash of vinegar, lemon juice, honey and garlic as a marinade or dressing.
3. Drizzle over a selection of nuts and lightly roast on a baking tray for 15 minutes, turning occasionally. Ta daa...a Sweet Chilli snack!
4. Pour over prawns for the last couple of minutes when pan frying for spicy prawns that make a perfect summer starter.
5. Add to the mayonnaise for cooked new potatos for an alfresco accompaniment with bite...
