Bangers & BBQ beans
You'll need:
2 - 3 tablespoons rapeseed oil
(we love Hill Farm extra virgin rapeseed oil!)
450 g pork sausages
100 g chorizo sausage, skinned and roughly chopped
4 onions, peeled and sliced thickly
4 cloves of garlic, peeled and finely chopped
1 red pepper, trimmed, deseeded and cut into strips
2 x 400 g tins of mixed beans in tomato sauce
Stokes Original BBQ Sauce
Method:
Cook the sausages in a medium oven until browned and set aside.
In the meantime put 1 tbsp rapeseed oil in a flameproof casserole dish and gently fry the chorizo, onions and garlic together until just soft and the chorizo has started to release its oils.
Add the red pepper and cook for a further 4-5 minutes, stirring throughout. Tip the mixed beans into the casserole with 2 tbsps of Barbeque Sauce, stir well. Place the sausages onto the beans, cover and simmer very gently for an hour.
