Jam and Preserves, Marmalade and Curd


Spread the joyous fruit

Commercial producers can use as little as 350g of fruit per kilo, with some jams using even less fruits and more additives and flavouring. Water and extra sugar are added to create the ‘jam effect’. 

‘Extra’ jam has a legal minimum requirement of 450g of fruit per kilo.
 

We don't believe in minimums 

We prefer more with our Strawberry, Raspberry and Blackcurrant extra jams. Stokes Extra Blackcurrant Jam has 510g per kilo – 51% of delicious fruit as our grandparents would traditionally have made it.

Magic Marmalade

Toast and marmalade - now that's a good breakfast. Toast with Stokes Seville Orange Marmalade - now that's a great breakfast. Once more, we took a traditional English recipe and made it our own to create a classic fine cut marmalade rich with the tangy taste of delicious Seville Oranges.

But it’s not just the amount of fruit.

can only create poor jam. 

It's all about ingredients

We go to uncompromising lengths to make sure the blackcurrants we use have that signature juicy sweet / tart flavour; the raspberries are rich, sweet and luscious; and the succulent strawberries have keynotes of Wimbledon.

Stokes use unrefined cane sugar, which is a typical artisan sugar. Produced in smaller batches, it is less processed and retains all or most of the cane molasses around the sugar crystals. 

This natural sweetness and additional depth of flavour simmer gently with the extra fruit to give the deeply flavoursome jams we love to deliver.

Stokes Lemon Curd is a truly wonderful thing with lemons, rich butter and British free range eggs. 

A simple recipe, simply made and simply delicious. Delicious on toast, pancakes, lemon tarts and lemon sponges.

Breakfast in Bed - romance isn't dead, just resting

Say it with eggs

 Bloody Mary Baked Eggs

http://www.stokessauces.co.uk/product/shop/breakfast-collectionOeuf en Cocotte (baked egg) is an old classic that we don't see very often, which is a shame because it tastes wonderful.

As with most things we do at Stokes, we have taken an old classic and given it a tasty modern twist adding our Bloody Mary Ketchup and baking the eggs in a scooped out tomato.

Here's how:
Take 2 big round tomatoes, cut off their tops and scoop out the inside flesh and pips. Fry the tomato pulp with a finely chopped shallot and the meat squeezed from the skin of a good Cumberland-style sausage and add 1 tbsp of Stokes Bloody Mark Ketchup.
Put each scooped out tomato into a ramekin (this stops it collapsing while baking) and half fill each with the sausage mix. Put the ramekins in a roasting tray sitting in half an inch of boiled water, then put the tray into the oven at 200°C/Gas mark 5 for 25 minutes (you'll see the egg white is cooked). Served with toast it's fun and flavoursome.

Sausage & Egg Mess

Shop-bought waffles make an easy alternative to toast. Here, we toast them until crisp, tear them and keep them warm.
Take the meat from the skin of 2 or 3 butcher's sausages, smash it up on a plate, add 1 or 2 tbsp of Stokes Brown Sauce and break the meat into smaller pieces. Put the sausage meat onto a baking tray then bake it in a hot oven until it becomes well coloured and slightly crunchy.
Dress the plate with crunchy broken waffles, sausage crumbs and a poached (of fried) egg. Finish with a good drizzle of hollandaise sauce (this can be shop bought, home made, or you could try this instant hollandaise sauce recipe, below).

Instant Hollandaise - Stokes Style

Here's how:
Mix 4 tbsp of Stokes Real Mayonnaise with 3 tbsp of sour cream, 1 or 2 tsp (to taste) of Stokes Dijon Mustard and the juice of 1/2 a lemon. Beat this together and add 1 tbsp of melted butter. Whisk this vigorously to avoid it splitting.

Smoked Salmon Eggs Benedict

Here's how:
For this dish, use the hollandaise sauce as above or, to marry with the smoked salmon, use 1 or 2 tsp (to taste) of Stokes Mustard & Dill Sauce instead of the Dijon mustard. It's a fabulous match.
Then, basically toast a couple of muffins, spread a little of our Real Mayonnaise on them, top with smoked salmon and a poached egg.
Smother with hollandaise sauce or dill hollandaise and share the love.

Valentines Day - an affair of the heart

No, not really though the real origins are no less brutal. It is said that from 13th to 14th February, the Romans celebrated the feast of Lupercalia. 

This was a very ancient annual pastoral festival observed in the city of Rome to avert evil spirits and purify the city, releasing health and fertility amongst its inhabitants.

As with many such celebrations, Emperor Claudius II took things too far by executing two men who had each been named Valentine. Their martyrdom was honored by the Catholic Church with the celebration of St. Valentine's Day.

Simplicity says 'I love you'. 
Stokes Tomato Ketchup - Award-winning, this is the ketchup of ketchups - packed with plump, sweet tomatoes that have ripened on the slopes in southern Italy. We gently simmer 200g of them for every 100g of thick, juicy tomatoey ketchup.
 Stokes Real Mayonnaise - this is really very special. We use only whole eggs from British free range Welfare Assured hens into which we drizzle very fine British rapeseed oil to create the product's core.
Then, to make our real mayonnaise stand out from the rest, we add extra virgin Koroneiki olive oil from Crete. Stokes Brown Sauce - our 'grownup' sauce shares its sensational aromas the moment you unscrew the lid. It's sweet and spicy with rich date puree, black treacle and a unique blend of Persian spices.

Tomatoes not only taste good, look good and add so much to all types of cooking - but they are good for you too.

It is because of the Vitamin B and potassium in tomatoes that they are so good for your heart. Best of all: no fat and no cholesterol.

Cooked tomatoes particularly are an excellent anti-carcinogenic.

They are effective in reducing cholesterol levels and lowering blood pressure. So by including tomatoes in your regular balanced diet you can help improve your general health.

Is it any wonder then that our Award-Winning Tomato Ketchup is made with so many of the little beauties.



A hearty meal

http://www.stokessauces.co.uk/page/sauces/ketchup-and-saucesBeef hearts cooked properly are full of flavour and so so tender. For this very simple recipe, use 2 kg of beef heart.
First wash the meat, removing any fat and arteries (your butcher should do this for you). Cut them in half and then into 1cm slices. Toss the meat in seasoned flour and brown quickly for a minute in foaming butter.

Put the browned meat in a casserole with a sliced onion, chopped carrot, swede, celery and a couple of sprigs of fresh thyme. Pour in 250 ml of beef stock, 125 ml of red wine with 2 tbsp of Stokes Brown Sauce and 1 tbsp of Cider & Horseradish Mustard. Bring to the boil and simmer gently for 1 1/2 to 2 hours.

It's fantastic with buttered kale and mashed potatoes with Stokes Creamed Horseradish Sauce.
