From Tin to Table - Tuna

Simple Suppers. 
Tin to Tasty in Minutes

With chopped spring onion, a few caraway seeds, twist of cayenne pepper, squeeze of lemon juice and a couple of good spoonfuls of Stokes Real Mayonnaise - it's the perfect topping for a winter Jacket Potato.

Tuna & Potato Stew
Whilst boiling some waxy potatoes, make a tomato soup base, adding 2 tins of tomatoes to 2 diced onions which have softened for a few minutes in oil. Bring this to the boil and simmer, adding 250ml of beef stock and 4 tbsp of Stokes Chipotle Ketchup (for smokiness and chilli warmth). Reduce it to a thick soup or stew before adding frozen peas and your tender, cooked potatoes. Season well, then after 5 minutes add chunks of tuna - lid on, heat off and serve after 5 minutes as the tuna warms through.
This works extremely well with cubed fresh tuna too.
[TIP: You can easily replace the smoky heat of Chipotle Ketchup by using our Chilli Ketchup. If chilli heat is not for you, use our thick Tomato Ketchup instead.]

Simple Tuna Burgers
Drain 2 x 185g tins of tuna, putting the meat in a bowl with 75g of breadcrumbs, an egg, 2 or 3 tsp of Stokes Cider & Horseradish Mustard, 1 tbsp of chopped parsley, 3 tbsp of Stokes Real Mayonnaise and 3 finely chopped spring onions.
Mix and mash the ingredients with a fork until everything is well combined into a rough paste. You should be able to form 4 decent sized patties, which you wrap in cling film and chill for 30 minutes before frying gently for 3 minutes each side.
A tasty garnish is a mixture of our Real Mayonnaise with a little Classic English Mustard and chopped capers.

Tuna 'Fish' Pie
Whilst your potatoes are boiling for the buttery mashed potato topping, soften 1 medium sized diced onion in butter, oil or both for 4 or 5 minutes.
Slice 6 or so fresh tomatoes, adding them to the onions with 2 grated cloves of garlic, 125ml of chicken stock and 1 tin of chopped tomatoes, 4 tbsp of Stokes Tomato Ketchup, 1 tbsp of our Brown Sauce and 2 tbsp of chopped parsley.
As this reduces, tip the drained contents of at least 2 (3 if you like a meatier base) 185g cans of tuna (in spring water), season and remove from the heat.
Spread the tuna mixture across the bottom of a baking dish (or individual pie dishes) and spoon the mashed potato on top, having stirred 1 tbsp of Stokes Cider & Horseradish Mustard through it first. Now pop the dish into a medium high oven for 20 minutes until the top of the potato starts to brown.
[TIP: Finishing this off under the grill crisps the top up beautifully.]

Tuna Ragù with Pasta
Tasty in no time at all is this tuna and tomato sauce with spaghetti. Softened onion, grated garlic, fresh basil, Italian mixed herbs, capers, olives, slices of celery with a tin of tomatoes and half a glass of red wine.
Stokes Tomato Ketchup is so thick with 200g of juicy Italian tomatoes in each 100g of ketchup that we use it as a concentrate. Add 4 or 5 tbsp of this or, as a tasty alternative, use our Bloody Mary Ketchup which adds a dash of vodka and delicious Bloody Mary spices - it certainly puts a smile on my face.
For deeper flavour still, stir a chicken stock bouillon into the mixture and a splash of water. Now, when seasoned, reduced slightly and tasting just right, drain and stir in the contents of a tin (or 2) of tuna. Warm this through and serve it with your pasta of choice.
