What better way to entertain the baby on a chilly weekend but to watch daddy do a blind tasting of eight different tomato ketchups. Mummy (Jenny) kindly shared the triumphant result and yes, all eight were correctly identified.
That's true ketchup knowledge from a true ketchup aficionado. Not only were all eight correctly identified, but Stokes Tomato Ketchup was declared the best of them all.

Flavours of the Orient

Simply Chinese

Chinese dishes always carry special meanings on special occasions. The symbolic significance of a dish may be based on what it looks like or how its name is pronounced. For example, at the New Year Dinner, everyone eats fish as the Chinese word for 'fish' is pronounced the same way as the word 'abundance'.

Like birthday cake, Chinese have noodles on their birthday parties, as long noodles symbolise long life. When a baby is born, people usually eat eggs painted red as they symbolise fertility.

Duck Breast
This duck breast has been marinated in Orange Juice, Stokes Brown Sauce and a pinch of Chinese 5 Spice. The citrus helps to penetrate and tenderise the meat and our Brown Sauce offers sweeter Persian spices which add deliciously to the Chinese spice combination.
Let the meat enjoy its soak for half an hour of so then pan fry the duck (no oil), skin side down for 6 minutes then turn it skin up and into a medium oven for 4 minutes. Remove the duck for a light coating of Stokes Hoisin Sauce then back into the oven for 2 minutes.
While the meat rests, prepare a salad of watercress and segmented orange pieces drizzled with a little of the leftover marinade.

Make a marinade for 600g of thinly sliced rump steak, combining 2 tsp of cornflour, 2 tsp of Chinese 5 spice, 2 tbsp of Stokes Brown Sauce and 3 or 4 tbsp of our Chilli Ketchup. Coat the beef well, adding 250ml of orange juice, 1 tbsp of soy sauce and 1 inch of grated fresh ginger.
Thinly slice 2 red peppers and fry them to soften in a wok for 4 or 5 minutes then add the beef (lifted from its marinade) for 3 hot minutes. Stir in the marinade for 3 minutes more while preparing about 500g of noodles to the pack's instructions.
The meat should be tender after 5 or 6 minutes when you add 3 tbsp of Stokes Sweet Chilli Sauce to the wok, together with a good handful of thinly sliced spring onions. Heat through and spoon over a bed of soft noodles and serve.

Szechuan Style Prawns
Stir fry 450g of raw, peeled prawns in a wok with hot groundnut oil with 1 inch of grated ginger, 2 grated cloves of garlic and 3 finely chopped spring onions.
Within 2 minutes, as the prawns start to turn pink, add 2 tbsp of Stokes Tomato Ketchup, 3 tbsp of our Sweet Chilli Sauce, a dash of cider vinegar and 1 tsp of soft brown sugar.
Serve as soon as the sauce starts to bubble with a couple of spoons of Stokes Garlic Mayonnaise on the side.

Ginger Tofu Stir Fry
First the marinade: Mix 1 tbsp of Stokes Sweet Chilli Sauce, 1 tbsp of Stokes Brown Sauce, a glass of orange juice, 1 tsp of Chinese 5 Spice, 2 inches of ginger (grated), 2 tbsp of soy sauce and 1 tbsp of soft brown sugar.
Cut 250 g of firm tofu into cubes and pop them into the marinade.
[TIP: Use a toothpick to prick holes in the tofu. This will help it take on the marinade.]
Stir fry 200g of sliced pak choi with 1 inch of ginger (finely sliced) in very hot groundnut or vegetable oil for 2 minutes, then add 125ml of dry white wine and 1 tsp of cornflour for 2 minutes more and set the vegetables aside.
Add a little more oil to the wok and gently cook the tofu for 7 or 8 minutes (retaining the marinade). Add the marinade and greens to the tofu and simmer for 2 minutes. Serve with plain boiled rice. Enjoy.

Fish Friday

Catch of the Day - Cod

This low fat beautifully white fleshed fish is said to be at its best in the spawning season - which is NOW and runs to the end of April.

Fish & Chip shops still have their longest queues on a Friday evening, though since 1980 folk have not been able to buy them wrapped in newspapers.

Winston Churchill called them 'the good companions'. To each other, yes, but also to the British public, as they helped sustain morale through two dreadful world wars.

The best fish & chips haven't been wrapped at all, but are served fresh from fryer to table and served alongside Sauces from Stokes.

Cod with Chilli Tomato
This is a succulent piece of cod, grilled and served on a powerful Chinese-style chilli broth.
For the broth, roast, peel and dice a red pepper then simmer it in beef stock, tomato juice, soy sauce and a little soft brown sugar. Now blitz to a 'soup' with a hand blender. 
Add Stokes Chilli Ketchup and a dollop of our Brown Sauce until it delivers the heat and flavours you want. Cook red pepper slices and courgette until tender and serve them in the broth with the cod on top and a dollop or two of sour cream or crème fraîche.

Cod Pie
Pre-heat the oven to 200°C/gas mark 6. Make a lovely buttery mashed potato, stirring 1 tbsp of Stokes Creamed Horseradish Sauce into it for wonderful additional flavour.
Put 500g of cod in an ovenproof dish, cover it with 600ml of milk, season well and bake it in the oven for 35 minutes until the fish starts to flake. Drain off and retain the milk, leaving the fish in the dish.
Now make a roux with equal amounts of butter and flour. Stir in 3 tsp of Stokes Cider & Horseradish Mustard (more if you wish - we do) and add the reserved milk, that the fish has poached in, until it thickens to a sauce.
Break the fish up with a fork, sprinkle with a handful of chopped parsley and add the white sauce, then spoon the mashed potatoes on top. Grate a good layer of Cheddar cheese on the potato and pop the dish into the oven for 35 minutes until the cheese browns and bubbles deliciously.


Pil Pil Cod

http://www.stokessauces.co.uk/page/sauces/traditional-condimentsThis is a Spanish dish normally made with salt cod, but we will be using cod steaks with the skin on, one each of about 200g.
Finely slice 5 cloves of garlic and fry them in 300ml of olive oil (it's a lot, yes) with 1 tsp of chilli flakes, until the garlic colours. We are looking to infuse the oil. Remove and reserve the garlic and chilli. Put the cod steaks in the pan, skin up, in the garlic infused oil and cook them for 3 minutes before turning them over for another 3 minutes (the timing will vary by the thickness of the fish).
Lift the cod out onto a plate where it will gradually release its juices. Drain this and the infused cooking oil into a bowl to cool.
Heat a little fresh oil in the same cooking pan with 1 or 2 tbsp of flour and 2 tsp (or more to taste) of Stokes Classic English or Dijon Mustard. Add the infused oil and fish juices to the pan to form a sauce which you can further thicken by adding a knob or two of butter.
I actually like to add a little cream or Philly-style creamed cheese at this stage before putting the fish back in the sauce to warm. Serve with yummy spoonfuls of the sauce and garnish with the fried garlic slices.

It’s still very wintry, but the holiday marks the end of the coldest days. People welcome spring and what it brings along: planting and harvests, new beginnings and fresh starts.

Because it is the Lunar New Year there's no fixed date for the holiday which can range from January 21st to February 20th.

This year it is on 25th January.

The celebrations are marked by a day of prayer to the gods and to chasing off monsters. Across the world, the greatest number of fireworks than for any other occasion will be set off to scare away those monsters - they obviously work.

The Simple Things
Sometimes it's 'the simple things' that stimulate the biggest sparkle in our lives - and sharing those simple things adds the biggest smiles. In this case it is 'simple' wedges of potato, fried until crisp on the outside and still fluffily soft in the middle. Sprinkled with oregano and flakes of Maldon sea salt, dunked in Stokes Tomato Ketchup.

Jelena @into.trends discovered our Creamy Caesar Dressing, using it to transform a prawn salad into a delicious Prawn Caesar Salad. It's a classic creamy salad dressing made with free range eggs, Parmesan cheese and garlic, with additional hints of Stokes magic.

Now that's what I call a serious breakfast butty. Sausage, bacon, black pudding, fried egg - all in a toasted muffin ... yes please.
The dilemma - to use Stokes Tomato Ketchup or our truly grownup Brown Sauce. Personally, I like tomato with sausages and brown sauce (Stokes' only) with bacon, so I would spread Tomato Ketchup on the bottom cut of muffin and Brown Sauce on the top.

The Curry Club

The concept gravitated west to Britain where the first curry recipe was published in a cookbook in 1747.

Roll forward many years and particular demands of the British palate created curry dishes never seen east of Hull.

Chicken Tikka Masala (British), Madras (British), Vindaloo (very British)...

... and as for the Balti - that was invented and developed in Birmingham in the early 70's and now even has EU Protected Name Status !

CURRIES MADE BETTER


'Ping' Curry Made Better

If you like your curries, but don't have time to make your own, this might be for you.
Most supermarkets have ready meals offering 'authentic Indian flavours'. A lot of them are pretty good on their own - but - can be made even better in moments:
The next time you buy one, tip it into a pan, add natural yogurt, garam masala and Stokes Curry Ketchup (or Stokes Tomato Ketchup and 1 tbsp of Curry Powder).
Let this simmer gently for about 20 minutes. This gives you more, thicker gravy, enhances the taste, and softens the meat.

Chilli Beef Curry

http://www.stokessauces.co.uk/page/sauces/ketchup-and-saucesTOP TIP: our favourite combination of spices for an Indian-styled curry include equal amounts of the seeds of - cumin, coriander, fennel, cardamom all ground in a pestle and mortar.

Make about 2 to 3 tsp of this to combine with 2 to 3 tsp of curry powder, adding a similar amount of garam masala towards the end of the cooking process - works every time.
Soften 2 roughly chopped onions in a large casserole dish then add about 800 kg of cubed rump steak.
Slice a couple of carrots into the pot and 3 red chillis.
[TIP: cut a slice into each chilli to release the flavours but leave them whole. This way when you taste the curry, you can easily remove them before it gets too hot.]
Add 2 to 3 tsp of the ground spice and curry powder (as above), 1 inch of grated ginger and 3 grated garlic cloves. Now add 3 tbsp of Stokes Chilli Ketchup, 2 tsp of Stokes Chilli Jam and 1 tin of chopped tomatoes.
Mix everything together and top it up with beef stock to just cover the meat. Lid on now and simmer gently 45 minutes. Remove the lid, stir in 2 to 3 tsp of garam masala and simmer without the lid for a further 15 minutes.

Chicken Bhuna

http://www.stokessauces.co.uk/page/sauces/ketchup-and-saucesThe Bhuna is wonderfully spicy thick sauce with a moderate heat. It is intensely flavoursome and easy to recreate at home.

You'll need:
  • 4 skinless chicken thighs
  • 3 onions, diced
  • 3 cloves garlic, grated
  • 1 tbsp of grated ginger
  • 3 tomatoes, diced
  • 1/2 teaspoon ground turmeric
  • 1 tbsp of Stokes Chilli Jam
  • 3 tbsp of Stokes Curry Ketchup
  • 1 tbsp of Stokes Classic English Mustard
  • 1 tbsp of medium curry powder
  • 1 tsp of coriander, ground
  • 1 tsp cumin, ground
  • 1 lime, juice only 
  • 1 tbsp of garam masala 
  • 125ml of natural yogurt 
  • a bunch or coriander leaves, chopped

Brown the chicken pieces then set them aside.
In the same pan, cook the onion for several minutes until it has softened. Add the garlic, ginger, all the spices, chilli jam, mustard and ketchup, cooking for 5 minutes before adding the tomatoes, covering and reducing the heat for 5 minutes more.
Put the chicken and juices back in the pan with the yogurt, 300ml of water, garam masala and lime juice, stirring everything well together. Bring the heat up and simmer for 30 minutes. Add the coriander, cover and set the curry aside for the flavours to become better acquainted.


Lamb Rogan Josh

You'll need:

  • 1 bunch of coriander leaves, chopped and stalks reserved
  • 1 tbsp of Stokes Chilli Jam
  • 3 tbsp of Stokes Curry Ketchup
  • 2 tsp coriander seeds, ground
  • 2 tsp cumin seeds, ground
  • 2 tbsp of garam masala
  • 5 cardamom pods, seeds only, ground
  • 2 onions, chopped
  • 600g lamb steak, cut into large chunks
  • 3 cloves of garlic, grated
  • 1 tbsp of grated ginger 
  • 4 tomatoes, quartered
  • 125g of natural yogurt
Here's how:
Blend the coriander stalks, chilli jam, spices and ketchup to a paste. Fry the onions until soft, then add the garlic, ginger, cardamom and lamb.
Cook the lamb, turning frequently for 5 minutes to brown the outside. Now stir in the wet spice paste, cooking it through for a further 5 minutes.
Pour 400 ml of water into the pan, stir, cover and simmer for 45 minutes on a low heat. Add the yogurt, tomatoes and coriander leaves, stir and cook for 10 minutes. Turn the heat off and let it rest.
The longer you leave it, the better it is. 

Smoky Pork Chilli

http://www.stokessauces.co.uk/page/sauces/ketchup-and-saucesCooked slowly, this chilli pork dish melts in your mouth releasing smokey heat from the Chipotle Ketchup.
Cut about 8 kg of pork shoulder steaks into 2 to 3 cm chunks and brown them in a casserole dish with a large chopped onion, 2 grated garlic cloves and 1 tsp of ground cumin.
Add 2 tbsp of flour, 4 tbsp of Stokes Chipotle Ketchup, 2 tins of chopped tomatoes and 1 tin of rinsed, drained kidney beans. Mix everything together well then top the casserole up with beef stock to just cover the meat.
Bring it to a gentle simmer then, with the lid on, transfer the dish to a medium low oven for 2 hours, checking on the liquid from time to time.
