Beautiful Beer Marinades for Father's Day

So today, we marry the two deliciously, using beer as the base for BBQ marinades that can be cooked to perfection indoors or, weather permitting, out.

BBQ Beer 'Chican'

This is a slightly more refined version of the 'can in a dark place' beer steaming alternatives we see from time to time. It's intended for a covered BBQ but is easier to keep a culinary eye on in the oven.

Here's how:
Drink exactly half a can of beer whilst cooking 1 grated garlic clove with the juice of 1 lime, 3 tbsp of Stokes Hot & Spicy BBQ Sauce in 125 g of melted butter. Pour the flavoured butter into the can to join the remaining beer.
Push the can into the cavity of the chicken and sit it on a roasting tin with garlic and slices of lemon. Rub the chicken skin with Stokes Garlic Mayonnaise and roast in a medium low oven for at least 2 hours until the bird is cooked right through an its juices flow clear. Your chicken with be full of smoky flavour and moist to the core.

Boozy Salmon

Think, Corona beer with a wedge of lime, on a sandy beach in the Maldives...

Here's how:
Make a marinade for the salmon by combining the juice of 2 limes with 100 ml of Pilsner beer, a good few dashes of soy sauce, an inch of grated ginger, a grated clove of garlic and 2 tbsp of Stokes Chilli Ketchup (more if you like a little more heat).
Lay your salmon steaks in a shallow bowl and cover them with the marinade. It's the usual story of 'the longer the better' when marinating, so cling film, fridge and rest, to let the fish soak up those fabulous flavours.
Out of the marinade, onto a sheet and under the grill, skin side up, for 8 minutes and you're done. Served with a zesty citrus couscous, it's delicious.
... Now, where's that snorkel and face mask.

Beer Marinated Steak

This simple marinade adds flavour to rump steak and tenderises it ready for the BBQ. The green sauce adds another dimension to tickle the taste buds.

Here's how:
For the marinade, mix 200 ml of stout (Guinness) with 2 tbsp of Stokes Brown Sauce, 2 tbsp of our Tomato Ketchup and 2 tbsp of soft brown sugar.
Immerse a large rump steak, or two, in the marinade, ideally overnight. Grill the steak to taste, slice into sharing pieces and drool.
For the green sauce, blend 500 ml of parsley with 1 shallot, 1 clove of garlic, 1 tbsp of Stokes Dijon Mustard, 2 tsp of Stokes Mint Sauce and 125 ml of olive oil. Spooned onto your steak and served with a salad of roasted tomatoes, your Father's Day will be a joy.
