Winter Mustards & Cranberry Sauces - warming, sweet & tart


Wintry Essentials

I'm delighted to be writing this on the perfect late Autumn, early Winter's day. Blue skies, bright sunlight shimmering remnant leaves and a chill in the air.

Cranberry & Mushroom 
'No-sausage' Roll.

In a mini version (cut small) it makes a scrumptious party nibble. Soften a diced onion and grated garlic clove in a pan of hot oil for 10 minutes. Very finely chop 450 g of assorted mushrooms and add them to the pan with a good knob of butter.
After 10 minutes remove, drain and cool the contents. Pop it all in a bowl and stir in an egg, 100 g of Stokes Cranberry Sauce (or our Orange & Cranberry Sauce which we steep in Ruby Port) 2 tbsp of Stokes Brown Sauce and a sprinkle of mixed dried herbs.
Roll this into a long 'meatless' sausage and fold it into a sheet or ready rolled puff pastry, rolled out to the thickness of a pound coin.
Seal the edges and score the pastry at 60mm or 30mm intervals (for long or short rolls). Wash the pastry with an egg and bake for 30 minutes at 200°C/Gas mark 7. You and your friends will love them.

Mix & Match

1. Blitz it with our Classic English Mustard for a sweet, tart, warming dip for sausages.
2. Add Cranberry Sauce to your crumble for a full flavoured dessert.
3. Mix with cream cheese for a tasty topping on crackers and bagels.
4. Dollop a spoonful on baked sweet potato in place of butter.
5. Top off your yogurt with a spoonful for extra fruity flavour.
6. Swirl it into your cake batter for delicious marbled muffins.


Marvellous Mustards
