British Pork - the finest pork on Earth


You just can't beat it, so eat it

The British Pig Health and Welfare Council ensures that our pigs benefit from the highest welfare standards in the world, far higher than than European legislated directives.

Farmers don't use growth hormones and antibiotic use has to be registered (so minimised). The distances from farm to shop are so short that the carbon footprint is negligible.

Here's one for the pub quiz - the top native British pigs breeds are – British Landrace, Hampshire, Middle White, Gloucester Old Spot, Tamworth, British Saddleback, Large White, Large Black, Welsh, British Lop, Berkshire, Oxford Sandy and Black. The majority of pork reared in the UK will be a large White hybrid.

Sweet & Sticky Pork

You'll need:

  • 2 tbsp of soy sauce
  • 2 tbsp of runny honey
  • 1 tsp of Chinese 5 Spice
  • 2 tbsp of Stokes Hoisin Sauce
  • 1 tbsp of Stokes Chilli Ketchup
  • 1 tbsp of Stokes Tomato Ketchup
  • 1 tsp of cornflour
  • 100 ml of dry white wine
  • 500 g pork tenderloin, trimmed and sliced
  • 3 or 4 spring onions, sliced
  • 1 inch of ginger finely sliced
  • Plain boiled rice to serve.

Here's how:
For the marinade, mix the first 6 ingredients together in a bowl. In a cup, put the cornflour and add the wine stirring to absorb the flour, then add this to the marinade. Spoon this into a sealable food bag and add the strips of pork to marinate, ideally overnight.
Drain off and reserve the marinade, then in a very hot wok, stir fry the meat, spring onions and ginger for 5 minutes. Pour in the remaining marinade, bubble for 2 minutes, then serve with plain boiled rice.


Mustard Pork Chops

This is based on a really simple rustic French recipe.

Here's how:
Combine 200 ml of crème fraîche with 5 tsp of Stokes Classic English Mustard in a shallow casserole-type dish, immerse a juicy pork chop each in this marinade and cover with clingfilm. Pop it in the fridge for an hour.
Now, melt a good knob of butter in a large frying pan and soften 2 or 3 diced shallots for 5 minutes. Drain off the chops and brown them for 5 minutes on each side. Dust the pan juices with 2 tsp of flour and pour over the marinade.
Let the chops cook in the simmering broth for 8 to 10 minutes adding another knob of butter to help put a sheen into the sauce. Serve with a good coating of creamy mustard sauce, a few potatoes and whatever green vegetable you choose.


Pork, Pear & Perry

That just about says it all.

You'll need:

  • 600 g pork tenderloin cut to thin medallions
  • Lots of lovely butter
  • 3 or 4 ripe pears, peeled, cored and quartered
  • 2 tsp of brown sugar
  • 3 diced shallots
  • 2 tsp of chopped thyme leaves
  • 3 or 4 tbsp of Stokes Cider & Horseradish Mustard
  • 150 ml of perry cider
  • 125 ml of double cream
  • A drop of brandy

Here's how:
We'll use 1 pan for the pears and 1 pan for the pork. In a good knob of melted butter, add the sugar and then the pears. Gently caramelise them for 8 to 10 minutes. Half way through, flame and add about 1 tbsp of brandy, letting the alcohol flame off.
In the other pan, sear the pork in batches for 2 minutes each side and set aside. With a bit more butter in the pan, fry the shallots and thyme until the onion softens, then add the perry to deglaze the pan.
Add the cream to the reducing perry, then pour in the contents of the pear pan, giving everything a good but gentle mix. Finally, add the pork and cooking liquors to the pears, simmering the contents for 3 or 4 minutes to let the flavours party.

If you can't buy cucumber and carrot already spiralized and don't have a spiralizer, julienne them or using a peeler, cut long thin ribbons and cut each again lengthways.
Slice a couple of spring onions lengthways and chop a good handful of coriander. In a bowl mix 2 tbsp of honey, 2 tbsp of Stokes Sweet Chilli Sauce, the juice of 1 lime, 1 inch of grated ginger, 1 tbsp of soy sauce and 2 tbsp of sesame or vegetable oil.
Toss the salad in the dressing, sprinkled with 1 tbsp of toasted sesame seeds.

Pork Sandwich

Well, it's considerably more than that! This is a Vietnamese favourite, eaten in a baguette as a sandwich reflecting Vietnam's years as a French colony.

Here's how:
Called Banh Mi, it is usually made with pork rump steaks beaten out to thin strips (minute steak style), marinated and grilled. We are using 500 g of minced pork which takes on the marinade more quickly and is easier to munch in a hungry hurry.
For the marinade mix 2 tbsp of grated lemongrass, 2 grated garlic cloves, 1 tbsp of Stokes Hoisin Sauce, 2 tbsp of Stokes Tomato Ketchup, 2 tbsp of soy sauce, 2 tbsp of brown sugar, 2 tbsp of sesame oil or vegetable oil and 1 tbsp of toasted sesame seeds. Immerse the minced pork in the marinade for an hour or so.
Heat a wok with sesame or vegetable oil, stir fry 2 chopped shallots and with a slotted spoon, add the minced pork. It will be ready in just 6 or 7 minutes, so prepare your baguettes. Spread with Stokes Real Mayonnaise, a dash of Stokes Chilli Ketchup, fresh herbs and daikon pickled carrot (from a jar). Add the cooked pork and go.



Hoisin Beef Wraps

When it comes to flavours, this has it all.

Here's how:
As we are sharing, take 2 nice sirloin steaks, remove the fat and sinew and slice into thin strips.
For the marinade, mix 3 tbsp of Stokes Hoisin Sauce, 1 tbsp of Stokes Brown Sauce, 1 tsp of Chinese 5 Spice, 2 tbsp of soy sauce, the juice of 2 limes, 125 ml of dry white wine, 1 tbsp of brown sugar and, our favourite, 1 inch of fresh ginger, grated. Give the beef a good soaking, overnight if possible.
With a slotted spoon, put the beef in a hot wok with sliced spring onions and quickly stir fry the meat for just 3 or 4 minutes.
Add the remaining marinade and bubble for 2 minutes then fold the juicy steak slices into a wrap with coriander and slices of cucumber. Served with Stokes Sweet Chilli Sauce, this works wonderfully with the other wraps, sandwiches and salad.


Beef Lettuce Wraps

http://www.stokessauces.co.uk/product/special-collections-and-gift-packs/chinese-new-year-collectionThese refreshing Oriental lettuce wraps can be made with minced pork, chicken or tofu, but today we're using ground beef.

Here's how:
Stir fry a 500 g pack of minced lean beef in a smoking wok until the pink has gone then set the meat aside. In the same hot wok now cook 3 finely diced shallots, 3 cloves of garlic (grated) and our 1 inch piece of ginger, grated.
After 3 minutes add the beef back to the wok with a small tin of water chestnuts, drained and chopped.
Add 4 tbsp of Stokes Hoisin Sauce, 1 tbsp of Stokes Chilli Ketchup and 1 tbsp of soy sauce. Cook the ingredients through for 2 minutes and it's ready to serve.
Spoon the meat into Baby Gem lettuce boats with a garnish of chopped spring onion, peanuts and grated carrots.

Continued Chinese New Year Celebrations

http://www.stokessauces.co.uk/page/chinese-new-yearThe Spring Festival is technically 15 days. But celebrations start on New Year’s Eve (making it 16 days).

You can also say that the holiday season starts in (lunar) December with the Laba Festival (腊八节—là bā jié). That’s around 40 days of celebrations!

QI: Showering isn’t allowed New Year’s Day. Sweeping and throwing out garbage isn’t allowed before the 5th February. This is to make sure you don’t wash away the good luck!

What else is taboo during Chinese New Year?
  • Hair cutting (before February 2)
  • Using scissors, knives and other sharp things
  • Arguing, swearing
  • Saying unlucky words (such as “death” and “sickness”)
  • Breaking things

Let's Eat

Char Siu Pork

Here's how:
This is so simple and truly delicious. First make a marinade using 2 tbsp of honey, 5 tbsp of Stokes Hoisin Sauce, 1 tbsp of soy sauce, 2 tbsp of Stokes Tomato Ketchup (or 1 of Tomato and 1 of Chilli Ketchup), 2 inches of fresh ginger (grated) and 2 tbsp of rice wine or dry sherry.
Spoon this into a sealable food bag and put a 500 g fillet of pork in the bag. Leave it to marinate at least overnight. Pre-heat the oven to 180°C/Gas mark 5.
Pour hot water into a roasting tin with a rack. Put the fillet on the rack (save the marinade) and roast it for 45 minutes.
While the meat is resting, put the marinade in a pan with a little of the cooking liquor to make a pouring sauce. Serve it with rice or noodles, they're equally sensational.


Ginger Tofu Stir-Fry

Here's how:
First the marinade. Mix 1 tbsp of Stokes Sweet Chilli Sauce, 1 tbsp of Stokes Brown Sauce, 1 tsp of Chinese 5 Spice, 2 inches of ginger (grated), 2 tbsp of soy sauce and 1 tbsp of soft brown sugar.
Cut 250 g of firm tofu into cubes and pop them into the marinade. (TIP: Use a toothpick to prick holes in the tofu. This will help it take on the marinade.)
Stir-fry 200 g of sliced pak choi with 1 inch of ginger (finely sliced) in very hot groundnut or vegetable oil for 2 minutes, then add 125 ml of dry white wine for 2 minutes more and set the vegetables aside.
Add a little more oil to the wok and gently cook the tofu for 7 or 8 minutes (retaining the marinade). Add the marinade to the tofu and simmer for 2 minutes. Serve the tofu over the greens with plain boiled rice. Enjoy.


Teriyaki Salmon

Serve the salmon with noodles combined with the stir-fried pak choi (above). The soft noodles and the moist salmon go really well together.

Here's how:
Use 2 x small or 1 x large salmon fillet each. Make a marinade of: 2 tbsp of Stokes Sweet Chilli Sauce, 2 tbsp of Stokes Hoisin Sauce, 2 tbsp of honey, 2 tbsp of dry sherry, the juice of 1 lime, 4 tbsp of soy sauce and - yes you guessed it - 1 inch of fresh ginger, grated.
Soak the salmon pieces in the marinade for half an hour whilst the oven warms to 200°C/Gas mark 6.
Put the salmon on a baking tray, cover with the remaining marinade and bake them for just 10 minutes.
