Beers, burgers, BBQs - heavenly
It's International Beer Day tomorrow (3rd August) and Doom Bar day every day in our local.
A cold beer and a steak from the barbecue are often said to be a match made in heaven on a summer's day. Back in 2014, research found that this pairing is also potentially good for your health.
Marinating meat in beer before grilling it can reduce the production of potentially harmful carcinogenic chemicals called polycyclic aromatic hydrocarbons (PAHs).
The enzymes in the beer actually break down the fatty tissue contained in the steak and the result will be a more tender piece of meat that will melt in your mouth.
It seems that a dark beer marinade is the better option, but much more research needs to be done - any volunteers? In the meantime, consider it a decent reason to soak your steaks in a foaming porter ale.

Beer Marinated Steak
You'll need:
- A thick cut of rump steak to slice after cooking, or whatever your preference
- 2 bottles of dark ale (one for you, one for the marinade)
- 4 tbsp of Stokes Original BBQ Sauce
- 1 tbsp of Stokes Cider & Horseradish Mustard
Here's how:
Prick holes in the meat with a fork to help the marination.
Mix the beer, BBQ sauce and mustard in a large bowl and immerse the steak(s) in it. You know what comes next - cover and let the meat drink up the marinade for as long as you can. The longer the better.
When you take the steaks out of the marinade, reduce the liquor in a saucepan for basting during the grilling.
Oil your grill and cook (basting occasionally) according to the cut and size of your meat and how pink or well done you like the end result.
Pork Ribs in Guinness
You'll need:
- Pork ribs, as many as you like
- 2 bottles of Guinness
- 1 red onion, sliced
- 2 garlic cloves, grated
- 4 tbsp of Sweet & Sticky BBQ Sauce (add more to taste)
- 2 tsp of Stokes Chilli Jam
Here's how:
Mix all the marinade ingredients together in a large bowl, cover and soak the ribs in the mixture for as long as you can.
Wrap the marinated ribs tightly in foil and bake on a medium / low heat for up to 2 hours.
Meanwhile pour the marinade into a pan and reduce it to a sticky glaze. Add more chilli jam if you like the kick or more BBQ sauce for an even sweeter, deeper glaze.
Remove the ribs from the oven, baste and grill them on the BBQ, turning and basting frequently until you can wait no longer.
Boozy Chicken
You'll need:
- 6 chicken thighs (or as many as you need of course)
- 1 bottle of beer - a nice IPA will do
- 1 clove of garlic, grated
- 4 tbsp of Stokes Original BBQ Sauce
- 1 tbsp of Stokes Cider & Horseradish Mustard
Here's how:
Mix the marinade ingredients in a large bowl. Season the meat and treat it to a well earned rest soaking in the delicious mixture for as long as possible.
Remove the chicken and pop them into a hot oven for 15 minutes. Meanwhile, guess what, reduce the marinade to a sticky glaze.
Baste the chicken and finish the thighs off on the BBQ for 15 minutes, basting with the glaze as you turn them.
When the juices run clear, your boozy birds are good to go.
